Chopped Greek Salad with Oregano White Balsamic

Prep: 15 minutes

Makes: 4-6 servings

4 tbsp Oregano White Balsamic
3/4 cup Fused Lemon Olive Oil
1 small shallot, finely chopped
½ tsp grated lemon zest
½ tsp dried oregano1/2 cup Pitted Kalamata Olives
1 cucumber, sliced
2 large tomatos, in wedges
1 large green pepper, diced (large pieces)
1 small red onion, finely sliced
3/4 cup feta cheese
5-7 pepperoncini peppers, chopped (optional)
Mixed greens (optional, traditionally not included)
Salt and pepper

In a small bowl, whisk together the Oregano White Balsamic vinegar, shallot, lemon zest and oregano. Whisk in the Fused Lemon Olive Oil, until the dressing becomes thick. Combine the rest of the ingredients in a large bowl and toss with dressing. Add salt and pepper to taste and serve.
