Espresso Beef Short Ribs

Prep: 15 minutes

Marinate: 12 hrs.

Cook: 1 ½ hrs.

Makes: 4 servings

2.2 lbs. short ribs

Sauce:

2/3 cup BBQ sauce
¼ cup Espresso Balsamic
¼ cup liquid honey
3 tbsps. Oregano Balsamic
2 tbsps. Dijon mustard
3 tbsps. chopped shallots
3 finely chopped garlic cloves

Mix all sauce ingredients and set aside.

Put the short ribs in a large pot filled with boiling water and let them boil for 5 minutes. Reduce heat. Cover and let simmer for 60 minutes. Strain the ribs and put them in a large glass container.

Pour the sauce over the ribs and marinate for 12 hours, flipping the ribs a few times during this process.

Grill the ribs over medium-high heat for 15-20 minutes, flipping them over during cooking. Baste the ribs generously with the sauce while cooking.
