Fresh Mango Salsa with Mango Balsamic

Prep: 15 minutes

Makes: approx. 3 cups

3 ripe mangos, diced
1 medium red bell pepper, chopped
½ cup chopped red onion
¼ cup packed fresh cilantro leaves, chopped
1 jalapeño, seeded and minced
1 large lime, juiced (approx ¼ cup)
4 tbsp Mango Balsamic
Salt, to taste

In a serving bowl, combine the mango, bell pepper, onion, cilantro and jalapeño. Drizzle with lime juice and Mango Balsamic, and mix well. Season to taste with salt. For the best flavor, let the salsa rest for at least 10 minutes to allow the flavours to blend; longer is better!

Serve with blue corn tortilla chips for a striking presentation.
