Oven Roasted Beets

Makes: 4 servings

3 medium beets, peeled and cut into bite-sized cubes
½ cup Italian Plum Balsamic
½ cup Herbs de Provence Olive Oil
2 cloves garlic, minced
1 tsp. dried thyme
1 tsp. salt
freshly ground pepper to taste


Preheat oven to 400 degrees. In a mixing bowl, whisk together the Fig Balsamic, Herbs de Provence Olive Oil, garlic, thyme and salt. Add beets to bowl and toss well to coat.

Spread a single layer of beets onto a baking sheet.

Bake for 45 minutes or until tender.
