Rustic Vegetable Beef Soup

Makes: 10 servings

1 ½ lbs. beef stew meat, chopped
1 small bell pepper, chopped
¾ cup fresh green beans, cut into 1” pieces
¾ cup onion, chopped
¾ cup carrots, chopped
2/3 cups fresh whole kernel corn
2 medium unpeeled potatoes, cut into 1” pieces
1 ¼ cups water
1 tsp. salt
½ tsp. tried thyme
½ tsp. minced garlic
¼ tsp. pepper
¼ cup Neapolitan Herb Balsamic
2 cans (14oz.) beef broth
2 cans (14 oz.) diced tomatoes
1 can (8 oz.) tomato sauce

Mix all ingredients in a 3 ½-6 quart slow cooker.

Cover and cook on low heat setting 8-9 hours or until vegetables are tender.
