Sweet Heat Mango Salad Recipe

Prep: 15 minutes

Makes: 6 servings

2 cups mango
¾ cup red pepper
½ cup onion,
½ cup green pepper
1 seedless English cucumber
3 tbsp. Mango Balsamic
2 tbsp. Chipotle Olive Oil
2 tsp. crushed garlic
½ cup chopped coriander or parsley
1 cup ramen noodles

Cook the noodles, rinse, and let cool.
Cut the mango and all the vegetables into thin strips and put in large bowl.

Blend the balsamic, olive oil, garlic and coriander then pour over fruit and vegetable mix. Toss well and serve over the noodles.
