Tomato-Olive Mint Salad Recipe

Prep: 15 minutes
Makes: 4-6 servings

3 medium tomatoes, chopped
1/3 cup cured black olives
1 clove garlic, minced
¼ cup Basil Olive Oil
2 tbsp. Oregano White Balsamic
¼ cup fresh mint leaves, chopped
½ tsp. each of salt & pepper
1 head of lettuce, finely chopped

Combine all of the ingredients, except lettuce, in a medium bowl. Toss to combine and let stand for 30 minutes. Serve over chopped lettuce.
