Makes: 4-6 servings
12 chicken drumsticks
2 tbsps. Chipotle Olive Oil
2 cloves garlic, finely chopped
1 tsp. cumin seed, toasted and ground
juice and zest of 1 lime>
1 tbsp. paprika
1 tbsp. brown sugar
sea salt & black pepper
fresh rosemary for garnish
Preheat oven to 400 degrees.
Combine the drumsticks with all of the ingredients in a large bowl, (except the rosemary) and toss to coat well.
Arrange in a singe layer in a small roasting pan. Bake for 30-35 minutes, flipping over half way through until the chicken is cooked and golden brown.
Top with rosemary and serve.
