Makes: 20 servings
20 medium fresh sea scallops
2 tbsp. lemon-pepper seasoning
1 tbsp. chopped fresh coriander
¼ cup Lemon Olive Oil
In a bowl, toss scallops with lemon-pepper seasoning, coriander and olive oil. Allow to marinate for at least 20 minutes or no longer than and hour.
In a large skillet over medium heat, cook bacon for about 1 minute per side or until partially cooked. Transfer to paper towels, drain and cool slightly.
When bacon is cool enough to handle, lay 4 strips on a work surface. Place a scallop, round side down, 1 inch from bottom of bacon strip. Keeping scallop centered, roll bacon up and over the scallop, wrapping it as securely as you can. Secure with toothpick if necessary. Immediately thread 2 to 3 scallops onto a skewer.
Grill scallops for 3 to 5 minutes per side or until just browned. Remove from skewers and serve.
