Makes: 4 – 6 servings
5 cups rhubarb, cut into 1” pieces
1 cup brown sugar
¼ cup water
1 tbsp. Raspberry Balsamic
½ tsp. nutmeg
2/3 cup flour
2/3 cup oatmeal
½ cup brown sugar (for topping)
1/3 cup Butter Olive Oil
Mix rhubarb, brown sugar, water, raspberry balsamic, and nutmeg. Place in a casserole dish.
Combine flour, oatmeal, brown sugar and a dash of salt. Mix well , add butter olive oil and mix until crumbly. Sprinkle over the rhubarb.
Bake crumble at 350 degrees for 30-40 minutes or until the rhubarb is tender
Serve warm with ice cream.
